Ingredients:
1½ cups water
½ cup maple syrup or granulated sugar
2 teaspoons vanilla extract or vanilla bean paste
1½ teaspoons ground cinnamon (or cinnamon sticks for more flavor)
1 cup milk of choice (oat, whole, 2%, coconut, or almond milk)
Espresso or strong brewed coffee
Ice
Whipped cream (optional, coconut whipped cream for dairy-free)
Additional ground cinnamon for garnish

Instructions:
Prepare the Homemade Cinnamon Dolce Syrup:
In a small saucepan, combine 1½ cups of water, ½ cup of maple syrup or sugar, 2 teaspoons of vanilla extract or paste, and 1½ teaspoons of cinnamon.
Bring the mixture to a boil over medium-high heat.
Once boiling, reduce the heat to medium-low and simmer for 8-10 minutes, stirring every 2-3 minutes. The syrup will reduce and thicken slightly.
Remove from heat and let it cool. Store excess syrup in a jar with a lid in the fridge for up to a week.
Assemble the Iced Cinnamon Dolce Latte:
In a tall liquid measuring cup, add 2-3 tablespoons of the homemade cinnamon dolce syrup and 1 cup of your chosen milk.
Use a handheld frother to blend and froth the mixture. Alternatively, stir with a spoon.
Fill a tall glass with ice and pour the milk and syrup mixture over it.
