Ingredients
āļø 2 servings of illy double espresso using illy Iperespresso coffee capsules
š„ 40ml amaretto liqueur
š„ 40ml very cold cream
šÆ Cane sugar for dusting
āļø 2 coffee beans for garnish
Instructions
1- Prepare Espresso:
- Use the illy FrancisFrancis! Y1.1 Iperespresso machine to make two shots of espresso.
- Pour them into an illy cappuccino cup.
2- Pour Amaretto:
- Measure approximately 40ml of amaretto liqueur.
- Pour into an illy branded cocktail/martini-style serving glass.
3- Heat Liqueur:
- Use the steam wand of the illy machine to gently warm the amaretto liqueur.
- Warm until it's touch-warm, preserving its aromatic qualities.
4- Add Espresso:
- Carefully pour the prepared espresso into the warmed amaretto.
- Create a rich, aromatic blend.
5- Prepare Cream:
- Place about 40ml of the very cold cream into a stainless steel mini shaker with an illy logo.
- Shake until it thickens significantly.
6- Shake Cream:
- Vigorously shake the cream until it thickens.
- Ensure it stops making a liquid sound inside the shaker.
7- Float Cream:
- Use the back of a long-handled bar spoon to gently float the dense cream.
- Achieve a beautiful layered effect atop the espresso and liqueur mixture.
8- Garnish:
- Lightly dust the cream with cane sugar.
