Welcome to a unique fusion of traditional South Indian flavors and modern cold brew techniques! Shunti Kapi is an adored coffee in South India, where the warmth of ginger marries the rich roast of the coffee. Maverick & Farmer have reinvented this classic as a refreshing cold brew, perfect for savoring on warm days or when you crave a comforting yet invigorating beverage.

Ingredients:

- 1 1/2 inches fresh ginger, pounded

- 3 tablespoons sugar

- 6 tablespoons water

- Cold brew coffee (new batch, lighter roast)

- Ice cubes, as needed

- Ginger ale (homemade or store-bought)

- Lemon or sweet lime wedge, for garnish (optional)

Instructions:

1. Prep Time: 10 minutes; Cook Time: 5 minutes; Total Time: 15 minutes.

2. Begin by preparing your ginger concentrate. Take the fresh ginger and pound it thoroughly to release its juices and flavors.

3. In a small saucepan, combine the pounded ginger, sugar, and water. Bring the mixture to a boil and then simmer until it has reduced by half. This should take around 5 minutes.

4. Once reduced, strain the mixture to obtain a clear ginger concentrate. This concentrate will add the defining ginger kick to your Shunti Kapi Cold Brew.

5. Next, prepare your cold brew coffee. If you don't already have this ready, follow Maverick & Farmer's previous instructions or your preferred cold brew method and have it chilled.

6. Fill a glass with ice to make sure your drink is perfectly chilled.

7. If you're preparing homemade ginger ale, mix the ginger concentrate with soda water to taste. For convenience, store-bought ginger ale works just fine.

8. Pour the cold brew over the ice, leaving some room for the ginger ale.

9. Add ginger ale to the cold brew to taste and gently stir to combine the flavors.

10. For an added touch of citrus, garnish with a wedge of lemon or sweet lime, but remember to keep it subtle so as not to overpower the harmonious ginger-coffee blend.

Equipment:

- Muddler or pestle

- Small saucepan

- Fine mesh strainer

- Glass for serving

Cooking Tips:

- Adjust the amount of sugar based on your preference for sweetness.

- For a stronger ginger flavor, you can increase the amount of ginger or let the concentrate simmer for longer.
