Discover the rich and creamy delight of Vietnamese Egg Coffee (Cà Phê Trứng), a beloved beverage characterized by its luscious egg foam atop strong, dark Vietnamese coffee. This unique treat is perfect for coffee aficionados seeking a sweet and indulgent experience.

Ingredients

☕️ 3 heaped teaspoons Illy dark Vietnamese coffee

🥚 2 egg yolks

🥄 2 teaspoons F&N sweetened condensed milk

🔥 Hot water

🥛 Optional: Carnation Evaporated Creamer

Instructions

1- Prepare the coffee:

  • Add 3 heaped teaspoons of Illy ground coffee into the Vietnamese coffee filter.

  • Gently press using the filter's clamp to compact.

2- Pre-warm the mug:

  • Pour hot kettle water into the glass mug to warm it.

  • Discard the water.

3- Initial coffee soak:

  • Position the filter on the warmed mug.

  • Add a small amount of hot water on the coffee grounds to moisten.

  • Wait about 2 minutes.

4- Brew the coffee:

  • Pour more hot water in the filter, filling it up to two-thirds.

  • Cover with the lid and let the coffee drip slowly into the mug.

5- Prepare egg foam:

  • Separate the egg yolks and place them in a small bowl.

  • Add the condensed milk.

6- Whisk the mixture:

  • Use a manual whisk or KitchenAid-style electronic hand mixer.

  • Vigorously whisk the yolks and milk until the mix becomes pale, frothy, and thick.

7- Assemble the coffee:

  • Once the coffee has dripped, carefully remove the filter.

  • Pour the egg foam over the coffee slowly using a spatula or a spoon to keep the layers intact.

8- Optional step:

  • For additional creaminess, pour Carnation Evaporated Creamer into the cup slowly to form another layer beneath the foam.

9- Enjoy:

  • Stir the layers gently with a spoon to blend flavors before sipping.
