Ingredients

💧 2.75 cups boiling water
☕ Heaping 1/4 cup dark roast coffee beans
🍳 1 large egg, BC Egg brand
❄️ 1/4 cup cold water
🍬 Sugar to taste (optional)
☕ Cream to taste (optional)


Instructions

1- Prepare the Water:

  • Pour 2.75 cups of water into a metal saucepan.
  • Bring it to a rolling boil using a gas range stovetop.

2- Grind the Coffee:

  • Measure a heaping 1/4 cup of dark roast coffee beans.
  • Grind them finely using an electric coffee grinder.

3- Mix Coffee and Egg:

  • In a stainless steel mixing bowl, add the finely ground coffee.
  • Crack the BC Egg brand large egg into the bowl, including the eggshell fragments.

4- Create the Mixture:

  • Pour 1/4 cup of cold water into the coffee-egg-eggshell mixture.
  • Use a black rubber/silicone spatula to mix thoroughly until a wet paste is achieved.

5- Combine Mixture and Water:

  • Once the water in the pot is boiling, carefully add the entire coffee-egg mixture to the saucepan.
  • Gently stir.

6- Simmer the Coffee:

  • Adjust the heat to a gentle simmer.
  • Allow the mixture to cook for 3 minutes, maintaining gentle bubbling.

7- Strain:

  • After 3 minutes, remove the pot from the heat.
  • Using a fine-mesh metal strainer, pour the coffee into a clean measuring cup or serving carafe.
  • Separate the liquid coffee from the solid grounds and egg solids.

8- Serve:

  • Pour the brewed coffee into a clear glass mug or cup.
  • Add sugar or cream to taste, if desired.
